Peanut Butter Cookies

finally THANKS TO GENIUS my internet is back up and running. see, there is a reason i give him that nickname ;)

Diehard was AutoCad-ing away and i was bored so i suddenly decided to make these cookies i saw in one of my mother's many-but-unused recipe books. i think it's called cooking class for beginners, i can't remember.

i've been craving soft, Subway-esque cookies for quite a while now, so i thought these just might do the trick since the recipe doesn't call for any flour. if i recall correctly, ingredients listing was:
  • 1 cup of peanut butter (chunky or creamy is up to you, i prefer chunky for the texture)
  • 1 cup of packed brown sugar
  • 1 'large' egg (grade A i guess?)
  • 3/4 cup choc chips.
easy shit eh? but guess who looked at her small jar of skippy and got stingy :D so i cut the recipe down to mixing 1/4 cup peanut butter, 1/4 cup butter a bit less than 1/2 cup brown sugar* and half a beaten egg in a bowl. the butter was added in hopes of obtaining that soft, chewy cookie texture.

well, what happened was that the whole thing was a bowl of liquidy mess that just simply could not be shaped into balls of cookie dough..so i had no choice but to add some plain flour to the mix..i did this bit by bit so that the mixture was just thick enough to be balled.

don't have a baking tray so had to use a small cake tin that had sides low enough for me to keep an eye on my cookies while they were in the oven (preheated to 180C by the way). about one really heaped teaspoon for one cookie which is dropped onto the greased cake tin. i finished that, then realised i didn't put in my 'choc chips' (choc bars that were chopped up into small bits), so had to pick up the dough in the bowl again and mix the 'chips' in.

*i took this from the heaps of small sachets of brown sugar that comes with Chek Hup coffee, you have GOT to try it, it is the best 2-in-1 in the worrldd, creamy nutty rich instant coffee..mm...ipoh people really know their stuff :D

12 minutes later, this was the result. 9 cookies in total. no wire rack so had to settle for this raised plastic thing.


yeah, flat and misshappened eh? at least they tasted pretty ok, but not the texture that i wanted, probably because of the flour. the lines are made by pressing a fork crosswise into the cookies before going in the oven.

there was still a bit left so i made this one for Diehard. it got broken when i tried to flip it over though. but he said he would fix it. :D
